Burger and vegi's

You know some days you just don't know what to do and for me that's today. I asked Kimmy what should I make for dinner? ... no answer.. I went back 5 minutes later...no answer.

  • 1 onion diced
  • 1 stock celery diced
  • 1carrot diced
  • 1 potato diced
  • salt and black pepper to taste
  • 1/4 tsp. cayenne to taste
  • 1/4 tsp tumeric powder
  • 1 pad butter with enough flour( about a tbsp. or so until grainy like cornmeal when mixed with fork)
So I started to dice my onion,carrots,potatoes, celery. Browned my burger in olive oil seasoned salt, pepper, garlic, and threw in my vegi's until they were tender. Added cayenne,tumeric and water so that everything could be in a nice sauce, put my butter-flour mixture to thicken it. Came out pretty good!

Creamed Chicken

Yesterday, I made Creamed Chicken. Kimmy my daughter loved it so much wanted to eat it for the next dinner too! I'm sure you will like this one Snap because it's like chicken pot pie that you like so very much. In fact, you might like it even more since you can add as much spice "cayenne" as you like! And besides this is really pretty fast food after work.
  • 1 onion diced
  • 2 stocks diced celery
  • 1 or 2 chicken breasts cubed
  • 2 tbs minced garlic 1 cup frozen vegetables ( carrots,peas,green beans, corn)
  • 1 to 2 cups milk/cream/half& half/ heavy cream
  • 1 cup chicken broth optional*
  • 1/2 tsp or more cayenne to taste
Start off saute' onions and celery put in cubed chicken mix until barely white(done) , put in garlic and add water. Make sure is simmering bubbly before adding frozen vegetables(because this will make temp drop for a few minutes) until just tender. You can add chicken broth if you want. And add butter flour mixture(rue) to thicken one to two pads to flour does it(you smoosh flour into butter until is in sand pebble size).

Just another day!

I'd like to say that I make all the money in the world but I don't and to this, please visit Lollipoptime it's the link to the right. I know you make more income too, right. Just in case you want to try something, if you will please take a look and like me attempt to make the dream come true. I want to post a pretty picture but my helper is asleep right now and we will have to wait until tomorrow. I wanted to take a walk to the post box, so down on the road I went today. I had bills to post . The birds were singing and butterflies doing there thing. It's wonderful to be able to see and hear the peace and loud noises of nature that only rural areas can provide. I know that this is not quite the way I should paint the picture, but hey it's the way I think of it. Most of us don't contemplate the wonderfulness of the simple things in life. I sure do with an ass cued mentality that only peculiar not so clear vision can ascertain. Like everyone else, when I was able to go to work, I drudged going to work. Not making great amounts of money to keep life as we know it, going from paycheck to paycheck. Sometimes we have to make a change when we want to change. We have to literally change because if we don't we will surely regret it. So I quit the 12 hr job six days a week. And then went to learn how to drive a tractor trailer. Yes, 18 wheeler. Then I looked for a job with company that would hire a student and worked for 13 months seeing America from shore to shining shore. I won't say it was easy because it wasn't. In fact, it was heart wrenching hard. To leave my kids behind and hit the road for 5 to 6 weeks at a time , it was very hard. I made enough money to pay my bills but never got to see my family. And then the worst thing that could happen did, I got sick and had to quit. I did love the job. It was the first job I really liked. Long hours 24/7 on the road. But I was in control, something I had never really had before. All the other jobs I had, I always had to report to a supervisor or boss or should I say they would keep an eye on me. All of that is just a memory now. Something I just think about every now and then. Every time I see a semi go down the street. I just sigh.... Remember you can always donate money to pay pal or help yourself and make yourself a new life with your own business. It's your choice!

Corn chowder

  • ½ package bacon(6 or more slices/rashes)
  • 1 diced onion
  • 1 cup diced celery
  • 1 large diced potato
  • 1 can (14.75 oz.) cream corn
  • 1 can ("") corn
  • 1-2 cups milk/ heavy cream/ half& half
  • thickener (corn starch or flour/butter mix) to taste
  • Salt and pepper to taste
  • cayenne to taste
  • Italian spice

Slice bacon into small pieces (about ½” wide) and then fry. Add onions and celery and sauté. Season. Move into a pot with water to cover (on medium-high heat). Season and sauté potatoes until it has a little color. Add to pot. Cook until potatoes are tender. Add canned corn and cream corn. Add milk. Add thickener and raise to a boil. Serve.

Spicy Vegetable Soup

  • 1 lb.meat, ½” cubed
  • 1 onion, sliced top to bottom
  • 1 cup diced celery
  • 1 potato, ½” cubes
  • 2-4 cups mixed frozen vegetables

Season(with salt, pepper, and cayenne pepper to taste) the meat, then dredge it in flour. Brown in frying pan on medium-high heat and then, put into pot with water (medium heat for pot) and cook until tender. Sauté onion and add to pot. Sauté celery and add to pot. Add potato to pot. Season with cayenne, bay leaves, and Italian spice. Cook until potatoes are soft, then add frozen veggies. Add broth if liquid isn't covering the ingredients. Thicken with about 1-2 tbs. of the flour/butter mixture. Serve.

Days of Summer

I don't like heat, especially when it gets sweaty. I love cold. Blackberry season is upon us again. I apologise that I have not been writing as regularly, but I pick the berries when they come into season to make jelly and preserves. Everybody in the house loves them. But it also takes time to process them and pick them. It usually takes an hour to go pick them and 2 days to process them if I have no help. When my daughter helps me it goes lots quicker. I'm not as strong or agile as I used to be and the mountain is very steep. Next year will be nice when the raspberries start bearing. I look forward to less thorns. I did not plant the blackberries they just grew by the grace of god. So too with the golden delicious apples , crab apples, and black walnuts that grow here. I guess I'm very lucky that I live in a farming area. The birds drop the seeds from neighboring areas. I used to buy apples from my neighbors farm but no more. How lucky is that! Well, I just wanted you all to know that I have not forgotten you all . Just busy with my berries.
